  • 150g Lean ground turkey
  • 1 cup Black beans
  • 1 cup Kidney beans
  • 1 cup Diced tomatoes
  • 1 cup Bell peppers, diced
  • 1 cup sweet corn
  • 1 cup Vegetable broth
  • 1 tbsp Chilli powder
  • 1 tsp Cumin
  • 1 tbsp Green yogurt
  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add ground turkey and cook until browned, breaking it apart with a spoon as it cooks.
  3. Add diced onion and garlic to the pot. Cook for 2-3 minutes until softened.
  4. Add bell pepper, zucchini, and carrot. Cook for an additional 5 minutes until vegetables begin to soften.
  5. Sprinkle chili powder, cumin, paprika, oregano, salt, and pepper over the turkey and vegetables. Stir well to coat everything evenly.
  6. Pour in the drained and rinsed black beans, kidney beans, diced tomatoes, and corn kernels. Stir to combine.
  7. Pour in the vegetable broth and bring the mixture to a simmer.
  8. Reduce heat to low, cover, and let it simmer for at least 30 minutes to allow the flavors to meld. Stir occasionally.
  9. Once the chili is ready, ladle it into bowls.
  10. Top with shredded cheese, chopped green onions, cilantro, or a dollop of sour cream if desired.
