FL - Wholegrain Pancakes with Berries

  • 1/2 cup Whole wheat flour
  • 1 tbsp Honey or maple syrup
  • 1 tsp Baking powder
  • 1/2 cup Unsweetened almond milk
  • 1 Egg
  • 1 tbsp Vegetable oil
  • 1/2 cup Mixed berries (blueberries, raspberries or strawberries)
  1. In a mixing bowl, whisk together the whole wheat flour, honey or maple syrup, and baking powder.
  2. In a separate bowl, beat the egg and stir in the almond milk and vegetable oil.
  3. Combine the wet and dry ingredients, mixing until smooth.
  4. Heat a non-stick pan over medium heat and lightly grease it with cooking spray or oil.
  5. Pour 1/4 cup of batter onto the pan for each pancake.
  6. Add a few berries onto each pancake while the batter is still wet.
  7. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  8. Serve with additional berries and a drizzle of honey or maple syrup.
