  • 4 oz (113g) Tofu
  • 1 cup Mixed stir fry vegetables
  • 1/2 cup Cooked brown rice
  • 1 tbsp Soy sauce
  • 1 tbsp Honey or maple syrup
  • 1/2 tsp Sesame oil
  • 1/2 tsp Garlic, minced
  1. Heat a non-stick skillet over medium heat and add the cubed tofu. Cook until lightly browned on all sides.
  2. Add the mixed stir-fry vegetables to the skillet and cook until tender-crisp.
  3. In a small bowl, whisk together the soy sauce, honey or maple syrup, sesame oil, minced garlic, salt, and pepper.
  4. Pour the sauce over the tofu and vegetables, then stir to coat.
  5. Serve the stir-fry over cooked brown rice.
