  • 1/4 cup Bell peppers, diced
  • 1/4 cup Onions, diced
  • 1/4 cup Tomatoes, diced
  • 1/4 cup Spinach
  • 1 tbsp Olive oil
  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add onions and bell peppers to the skillet and sauté for 2-3 minutes until they start to soften.
  3. Add tomatoes and spinach to the skillet and cook for another 1-2 minutes until the spinach wilts.
  4. In a small bowl, whisk the eggs with salt and pepper.
  5. Pour the beaten eggs into the skillet with the vegetables.
  6. Gently scramble the eggs and cook until they are cooked through but still moist.
  7. Remove from heat and serve hot.
