  • 2 Eggs
  • 1/4 Cup Diced Bell Peppers
  • 1/4 Cup Diced Onions
  • 1/4 Cup Tomatoes
  • 1/4 Cup Chopped Spinach
  • 1 Teaspoon Olive Oil
  1. In a bowl, whisk the eggs with salt and pepper.
  2. Heat the olive oil in a non-stick pan over medium heat.
  3. Add the bell peppers, onions, and tomatoes to the pan. Sauté for 2-3 minutes until slightly softened.
  4. Add the chopped spinach and cook for another minute.
  5. Pour the whisked eggs over the veggies in the pan.
  6. Cook for a few minutes until the edges are set, then gently fold the omelette in half.
  7. Cook for an additional minute or until the omelette is cooked through.
  8. Serve hot with a side of whole grain toast or a small fruit salad.
