  • 2 ounces Soba noodles, cooked
  • 4 oz Tofu, cubed
  • 1 cup Broccoli florets
  • 1/2 cup Bell peppers, sliced
  • 2 tbsp Soy sauce (low sodium)
  • 1 tbsp Rice vinegar
  • 1 tsp Sesame oil
  • 1/2 tsp Chili garlic sauce
  • 1/2 tsp Sesame seeds
  1. In a large skillet or wok, heat sesame oil over medium heat.
  2. Add the cubed tofu and cook until lightly browned on all sides.
  3. Add the broccoli florets and sliced bell peppers to the skillet and stir-fry for about 3-4 minutes until they are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, rice vinegar, and chili garlic sauce (if using).
  5. Add the cooked soba noodles to the skillet along with the sauce, and toss everything together until well coated.
  6. Season with salt and pepper to taste.
  7. Garnish with sesame seeds before serving.
