  • 1 cup Sweet potato, diced
  • 1/2 cup Chickpeas
  • 1/2 cup Spinach leaves
  • 1/4 cup Coconut milk
  • 1 tbsp Curry powder
  • 1 tsp Olive oil
  1. In a pan, sauté sweet potatoes in olive oil until slightly browned.
  2. Add chickpeas, curry powder, salt, and pepper. Stir well.
  3. Pour in coconut milk and simmer until sweet potatoes are tender.
  4. Add spinach and cook until wilted.
