  • 1 Whole wheat tortilla
  • 1/4 cup Egg whites
  • 1/4 cup Spinach leaves
  • 1/4 cup Mushrooms, sliced
  1. In a non-stick pan, sauté the mushrooms and spinach until cooked.
  2. Season with salt and pepper.
  3. In the same pan, cook the egg whites until set.
  4. Warm the tortilla in a separate pan or microwave.
  5. Place the cooked egg whites, spinach, and mushrooms on the tortilla.
  6. Roll up tightly and cut in half.
  7. Serve warm
