  • 4 oz Shrimp, peeled and deveined
  • 1 cup Cauliflower rice
  • 1/2 cup Mixed stir-fry vegetables (bell peppers, muschroom, zucchini)
  • 1 tbsp Soy sauce
  • 1 tbsp Sesame oil
  • 1 Garlic clove, minced
  1. Heat sesame oil in a pan over medium heat. Add minced garlic and sauté for 1 minute.
  2. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the pan.
  3. In the same pan, add the cauliflower rice and stir-fry vegetables. Cook for 4-5 minutes until the vegetables are tender-crisp.
  4. Return the shrimp to the pan, add soy sauce, and cook for another minute to heat everything through.
  5. Season with salt and pepper to taste and serve hot.
