  • 2 Bell peppers
  • 1 cup Quinos, cooked
  • 1 cup Black beans
  • 1 cup Sweet corn
  • 1 cup Tomatoes, diced
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1/2 cup Shredded cheddar cheese
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix quinoa, black beans, corn, diced tomatoes, cumin, and chili powder.
  3. Stuff each bell pepper half with the mixture.
  4. Top with shredded cheddar cheese.
  5. Bake for 25-30 minutes or until peppers are tender.
  6. Garnish with fresh cilantro.
