  • 1 can (15 oz) Chickpeas
  • 2 cups Spinach leaves
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Red onion
  • 1/2 cup Feta cheese, crumbled
  • 1 tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • 1 tsp Dried oregano
  1. In a pan, sauté red onion in olive oil until softened.
  2. Add chickpeas, cherry tomatoes, and dried oregano. Cook until tomatoes are slightly softened.
  3. Stir in spinach and cook until wilted.
  4. Drizzle with balsamic vinegar, season with salt and pepper.
  5. Top with crumbled feta cheese.
