  • 1 cup Lentils, cooked
  • 1/2 cup Carrots, diced
  • 1/2 cup Celery, diced
  • 1/4 cup Onion, diced
  • 2 cloves Garlic
  • 4 cups Vegetable broth
  • 1 Bay leaf
  • 1 tsp Dried thyme
  1. In a large pot, sauté onions and garlic in olive oil until translucent.
  2. Add carrots and celery and cook for another 3-5 minutes.
  3. Add cooked lentils, vegetable broth, bay leaf, dried thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
  5. Remove the bay leaf before serving.
