  • 1 Whole wheat tortilla
  • 1/2 cup Chickpeas, rinsed and drained
  • 2 tbsp Red pepper, diced
  • 2 tbsp Cucumber, diced
  • 2 tbsp Red onion, diced
  • 1 tbsp Fresh parsley
  • 1 tbsp Tahini
  1. In a mixing bowl, mash the chickpeas lightly with a fork or potato masher.
  2. Add the diced red bell pepper, diced cucumber, diced red onion, chopped fresh parsley, lemon juice, tahini, salt, and pepper to the bowl. Mix well.
  3. Lay the whole wheat tortilla flat on a clean surface.
  4. Spread the chickpea salad evenly over the tortilla.
  5. Roll up the tortilla tightly into a wrap and cut it in half before serving.
