  • 1 can (15 oz) Chickpeas, drained and rinsed
  • 1 cup Mixed stir-fry vegetables (peas, bell peppers, carrots)
  • 1/2 cup Cooked quinoa
  • 2 tbsp Soy sauce (low-sodium)
  • 1 tbsp Sesame oil
  • 1 tsp Garlic, minced
  • 1/2 tsp Ginger, grated
  • 1/2 tsp Red pepper flakes
  1. In a skillet, heat sesame oil over medium heat. Add minced garlic, grated ginger, and red pepper flakes. Sauté for a minute.
  2. Add the mixed stir-fry vegetables and cook until tender-crisp.
  3. Stir in the chickpeas and cooked quinoa.
  4. Pour in the low-sodium soy sauce and cook for another 2-3 minutes, stirring to combine all the ingredients.
  5. Season with salt and pepper to taste.
